Obed Adjei Peprah is a Ph.D. researcher at Atlantic Technological University, Sligo, focusing on AI-enhanced digital twins for optimising spray drying in dairy manufacturing. Supervised by Dr. Saritha Unnikrishnan, with co-supervision from Dr. Marion McAfee, Dr. Emmett Kerr, and Dr. Norah O’Shea, his work is funded under the TU RISE programme. Obed holds a BSc from Kwame Nkrumah University of Science and Technology (Ghana) and an MSc from Kalinga Institute of Industrial Technology (India), awarded through the Study in India scholarship. With over four years of industry experience as a Software and DevOps Engineer, he has contributed to AI systems for healthcare and anomaly detection. His research interests include AI, digital twins, intelligent manufacturing, edge computing, and network security.
